Today, I’m here with another famous gol gappay recipe. They’re very popular spicy street food in Pakistan and India. Gol Gappay is known as a very famous Asian snacks. In some cities, people also called it pani puri. In Pakistani streets, you will find lots of stalls of gol gappay. Some cities like Islamabad serve it with ketchup. Making them at home allows you to customize their fillings.

Ingredients for dough:
Semolina (Sooji) – 1 cup
Plain refined flour (Maida) – 2 tablespoon
Baking Soda – ¼ teaspoon
Warm water
Oil for frying
Ingredients for green chatni:
Green chilies – 4 or 5
Green Coriander – ½ Bunch
Mint Leaves – ½ Bunch
Black Salt – ½ teaspoon
Roasted white cumin seeds – ½ teaspoon
Garlic – 1 clove
Ingredients for sweet & sour chatni:
Tamarind pulp – 1 cup
Sugar – ½ cup
Black Salt – ¼ teaspoon
Dry ginger powder – ¼ teaspoon
Red chili flakes – ¼ teaspoon
Roasted white cumin seeds (crushed) – ¼ teaspoon
Chat Masala – ¼ teaspoon
Water – 1 cup
Ingredients for Spicy & Sour water:
Water – 6 cups
Tamarind pulp – 1 cup
Mint leaves – ¼ bunch
Chat Masala – 2 tablespoon
Salt – As required
Black Salt – ½ teaspoon
Roasted White cumin seeds powder – ¼ teaspoon
Red chili powder – 1 teaspoon
Carom Seeds – ¼ teaspoon
Dry ginger powder – ¼ teaspoon
Tatri (lemon salt) – ¼ teaspoon
Ingredients for Gol Gappay Filling:
Potato (Boiled and chopped in medium size) – 1 cup
Bondi (Soaked in water) – 1 cup
Chickpeas (Boiled) – ½ cup
Onion (Chopped) – 1 medium size
Tomato (Chopped) – 1 medium size
Green Chilies (Chopped) – 4 to 5
Salt – as required
Red chili flakes – ½ teaspoon
Green Coriander (Chopped) – ¼ bunch
Chat Masala – ¼ teaspoon
Making of gol gappay:
Step 1:
Preparing Gol Gappa (Puri)
Add 1 cup semolina (Sooji), 2 tablespoons plain refined flour (Maida), and ¼ teaspoon baking Soda, and mix it well.
Now add some warm water as required and knead well until you get a soft dough. Cover the dough with a wet cloth for 20 to 30 minutes.
Now make small balls from the dough. Roll small dough balls and make thin roti. Now shape it into small circles with the help of a round cutter.
Cover these small round circles with a wet cloth for 10 to 15 minutes.
Take a small frying pan, add cooking oil, and put it on high flame for frying puri.
Now start adding small thin circles in heated oil one by one, flip and press them slowly, until you get crispy and golden puri.
Set them aside and let them cool down.
Step 2:
Preparing Green Chatni:
Put 4 to 5 green chilies, ½ bunch of green coriander, ½ bunch of mint leaves, ½ teaspoon black salt, ½ teaspoon roasted white cumin seeds, and 1 garlic clove in a grinder. Grind it well and set it aside.
Step 3:
Preparing sweet & sour chatni
Add 1 cup tamarind pulp, ½ cup sugar, and 1 cup water to a frying pan. Put it on high flame and cook for 4 to 5 minutes until it gets thick.
Now add ¼ teaspoon black salt, ¼ teaspoon dry ginger powder, ¼ teaspoon red chili flakes, ¼ teaspoon roasted white cumin seeds (crushed), and ¼ teaspoon chat masala and mix it well and let it cook on a medium flame for more than 2 minutes.
Turn off the flame. Set it aside and let it cool.
Step 4:
Preparing Spicy & Sour water:
Take a small pot; add 2 cups of water, 1 cup of tamarind pulp, ¼ mint leaves, 2 tablespoon chat masala, salt to taste, ½ teaspoon black salt, ¼ teaspoon roasted white cumin seeds powder, 1 teaspoon red chili powder, ¼ teaspoon carom seeds, ¼ teaspoon dry ginger powder, ¼ teaspoon tatri (lemon salt), mix it well and put it on high flame for 5 to 10 minutes until the water gets boiled.
Now strain this water with a strainer and add 4 cups of water. Put it in a fridge and let it chill.
Step 5:
Preparing filling for gol gappay:
Take a medium-sized bowl. Add 1 cup of boiled and chopped potato, 1 cup of bondi (after bondi gets soft, separate it from water by pressing it softly), ½ cup b boiled chickpeas, 1 medium-sized onion (chopped), 1 medium-sized tomato (chopped), 4 to 5 green chilies (chopped), salt to taste, ½ teaspoon red chili flakes, ¼ bunch of green coriander (chopped), and ¼ teaspoon chat masala. Mix all the ingredients well.
Step 6:
Serving
Make a small hole in the center of gol gappa (puri). Fill it with potato filling. Add some green chatni and sweet & sour chatni. Dip it into spicy & sour water and fill puri with this water.
